It really should be the Esc Key.
On macOS its Command+FullStop, so could use Ctrl+.
Most users I have come accross would just try the "Esc" key and then (after Notes still not responding) kill Notes from the Task Manager, not realizing, that they could have interrupted the activity using "Ctrl+Break".
Hence, it would make sense to make it a configurable option to replace "Ctrl+Break" with "Esc", or even change the default.
It's Fn+Alt+B on my Lenovo.
FYI - i just had this problem today and was happy that i could use the windows on screen keyboard (C:\Windows\System32\osk.exe) as a workaround to cancel an operation.
