Sametime 12 is a single server install for Chat and for Chat and Meeting deployments. In previous versions there were three separate servers required: 1. Community server to support Connect and Embedded clients, 2. Proxy server to support web and mobile clients and 3. Meetings server to support meetings. Sametime 12 is a single server install with all these servers included.
I think that you only need to have 1 server for text chat, maybe 2 if you wish to have that while you are connected to internet. However when you want audio / video chat then it could get very complicated.
