SMTPUTF8 support is required to keep receiving messages

Domino should support for Email Address Internationalization OR Internationalized Email specs SMTPUTF8 (RFC6530 - 6533)

As more and more messages contains UTF8 in the headers. These messages get bounced now.

RFC 6532 and RFC 6531 allow the inclusion of Unicode characters in a header content using UTF-8 encoding, and their transmission via SMTP.

Currently this is not supported by Domino

Can you explain this in more details?
Who is the EAI user? the sender, the recipient, or a person on copy?

Currently EAI is not supported and none of your users should have an EAI smtp email address.
Seems like you registered an email address for testing that contain UTF8 characters in the local part of the mail address.
According to the RFC, the SMTP client connecting to the server should not send any UTF8 content as part of the header unless announced by the server.
If the SMTPUTF8 SMTP extension is not offered by the SMTP server, the SMTPUTF8-aware SMTP client MUST NOT transmit an internationalized email address and MUST NOT transmit a mail message containing internationalized mail headers as described in RFC 6532
