There should be an area in a forms designer properties box to define the field of "that form" which should not be fulltext indexed.
I agree that this solution will help many developers solve their project tasks.

Seconded. An opt-out of FT index would save loads of aggro.
Re some fields being visible to some people: Just leave them in !
But some fields like $updatedby and unique key fields .. depending on the design, you might never want them to be indexed
Good idea, but what with fields that are visible to some users, and not to others?
