If you remove a person (an address) from Domino Directory (DD), then Domino does not know that the address exists - or ever existed - and what to do with it.
If you need to send something back, you can either leave the mailbox and Person document in DD and use an Out of Office as mentioned below, or you redirect the address to a special "reply" mailbox that return a message whenever it received a message.
Both let you keep track of the action.
out of office is something different which is used if the user is on vacations but still exists in domino directory but if user is not in directory then how it can configured for the message "User has left the company".
As stated below, this can be done by setting up an out-of-office function for the mail.
