Would creating a bunch of entries in the address book for signing purposes increase the numer of needed licenses?
You can also set an item "inetfrom" and Domino will use this.

I think that for example external java (or other api) code running on server is always running as a server ID.
(and I hope we do not need a license for that person document for server ;-)
Just create a person document for your server to define the outbound mail address. However, my recommendation is:
Do not sign agents with the server ID, instead use a specific agent signer ID.
At best, run each agent with its own (virtual) agent signer name (=run on behalf of YourAgentName/OU/O) so that you can see which agent modified which document. Create a person document for that name.
